Fifteen-Minute Stir Fry
On days when I am crunched for time and need a quick hit of protein for lunch, I make this stir fry. It's incredibly easy and clean. It also keeps me full for hours without making me sleepy in the afternoon.
I start with a package of organic chicken thighs. I got these at Sprouts two days ago.
I cut up the chicken into bite size chunks (they will reduce in size during cooking).
I sauté the chicken for a bit and then add some frozen vegetables from the Kirkland mix from Costco.
I add some salt and spices, stir the ingredients and let them cook through.
Here is the finished product. All in 15 minutes.
